About the Greek Lamb Gyro.
People argue about what a gyro is supposed to be. In Greece it is often pork; in American diners it is usually a beef-and-lamb cone; at halal carts it can be chicken or lamb over rice. Ours is lamb, seasoned and cooked on the truck, folded into pita with vegetables and a cool sauce.
Lamb is the meat many halal households look for at a celebration, which is why the gyro shows up on our suggested menus for weddings, birthdays and faith gatherings. It eats richer than the chicken shawarma and goes well with something crisp on the side.
