About the Chicken Quesadilla.

The chicken quesadilla is the quiet workhorse of a school or fundraiser menu. It is not spicy, it does not drip, and it is familiar to picky eaters, which is why it appears on our suggested menus for both.

Inside is grilled chicken and melted cheese; outside, a tortilla toasted until it crisps at the edges. Ranch or BBQ on the side turns it into a dipping snack.
